    It's SUMMER, and I don't know about you, but warm weather brings out my fruit obsession. Is there anything that screams summer quite like fresh watermelon?! I just have to get my hands on 'em whenever I see them at the grocery store. I'm all for cutting one in half and going to town with a spoon, but I obviously had to craft up some true #hotforfood creations. I've got recipes on the blog for using watermelon in your salads, salsas, and even your ice cream! And for a refreshing drink that's different than your norm, you'll love these watermelon icebergs. 

    You can make this thirst-quencher in just 3 simple steps: muddle, blend, pour! The fruity flavors combine perfectly with the fresh mint and lime juice. Whether you're hanging by the pool, grilling up some BBQ recipes or just hanging in the sun, you'll want a watermelon iceberg by your side. They can be made kid-friendly as listed below, or feel free to spike them for your grown up guests. The recipe calls for 4 servings, so invite over the fam or some friends for some sweet sippin'. Or you can half or quarter the recipe if you're hanging solo!

    Ingredients

    • 2 C watermelon chunks/cubes
    • 2 C whole frozen strawberries
    • 2 ½ C ice cubes
    • 1 ½ liters sparkling water or lemon lime soda, chilled
    • 2 limes
    • fresh mint sprigs

    Instructions

    • In each glass, muddle the juice of half a lime and 3 to 4 torn mint leaves. If you prefer a spiked drink, add 1 - 1.5 oz of vodka or rum to the glass when muddling.
    • In a blender, combine ice cubes, watermelon, and frozen strawberries until a thick slush is made. To assist blending, you may need to use a spoon or spatula to push the contents of the blender closer to the blade.
    • Pour approximately 1 ½ cups of sparkling water in each glass. Use lemon lime soda if you prefer a sweeter drink.
    • Scoop slush into each glass until it is full to the brim. Serve immediately.
